Millet Pilaf:

Rinse and drain 1 cup of millet and set aside

In a saucepan, heat 1 tablespoon of olive oil over medium heat and sauté 1 diced onion and 2 minced garlic cloves until fragrant

Add the millet to the pan and cook for 2-3 minutes, stirring occasionally

Pour in 2 cups of vegetable broth and bring to a boil

Reduce the heat to low, cover the pan and let it simmer for about 20 minutes until the millet is tender and the broth is absorbed

Fluff with a fork and serve

1 cup millet, rinsed and drained

2 cups vegetable broth

Millet Muffins:

2 cups all-purpose flour

1/2 cup cooked millet

1 tablespoon baking powder

1/4 teaspoon salt

2 eggs
-
1/2 cup honey
-
1/2 cup melted butter
-
1 cup milk

Preheat the oven to 375°F and line a muffin tin with paper liners

In a bowl, mix 2 cups of flour, 1/2 cup of cooked millet, 1 tablespoon of baking powder, and 1/4 teaspoon of salt

In another bowl, beat 2 eggs, 1/2 cup of honey, 1/2 cup of melted butter, and 1 cup of milk until smooth

Pour the wet ingredients into the dry ingredients and stir until just combined

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full

Bake for 20-25 minutes until the muffins are golden brown and a toothpick inserted into the center comes out clean

Let them cool for a few minutes before serving

BAJRA KHICHDI:
ingredients you'll need to bajra khichdi :

1/2 cup yellow moong dal (split yellow lentils)

2 tbsp ghee or oil

1 tsp cumin seeds

1 onion, chopped

1 tsp grated ginger

2 cloves garlic, chopped

1 tomato, chopped

1 carrot, chopped
-
1/2 tsp turmeric powder

1/2 tsp cumin powder

Salt to taste

4 cups water
-
Coriander leaves for garnish (optional)

In a pan, heat 1 tablespoon of ghee and sauté 1 chopped onion, 1 chopped tomato, 1 chopped carrot, and 1/2 inch of grated ginger until softened

Add 1/2 cup of split yellow lentils (moong dal) and 1/2 cup of bajra and stir well
-
Pour in 4 cups of water, add salt to taste, and bring to a boil
-
Reduce the heat to low and let it simmer for 20-25 minutes until the khichdi thickens and the lentils and millet are cooked

Serve hot with a dollop of ghee on top
