Millet Pilaf recipe!

Ingredients:

  • 1 cup millet

  • 2 cups water

  • 2 tablespoons olive oil

  • 1 small onion, chopped

  • 1 garlic clove, minced

  • 1/4 teaspoon ground cumin

  • 1/4 teaspoon ground coriander

  • 1/4 teaspoon ground cinnamon

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh mint

  • 1/4 cup chopped dried apricots

  • 1/4 cup chopped almonds



Instructions:

  1. Rinse the millet in a fine-mesh strainer and drain well.

  2. In a medium saucepan, bring the water to a boil. Add the millet and stir. Reduce the heat to low and cover the saucepan with a lid. Simmer for 18-20 minutes or until the water is absorbed and the millet is tender.

  3. While the millet is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until the onion is translucent.

  4. Add the cumin, coriander, cinnamon, salt, and black pepper to the skillet and stir until fragrant, about 30 seconds.

  5. Add the cooked millet to the skillet and stir to combine with the onion and spice mixture.

  6. Add the parsley, mint, apricots, and almonds to the skillet and stir to combine. Cook for an additional 1-2 minutes until everything is heated through.

  7. Serve the millet pilaf warm as a side dish or as a main course. Enjoy!
